This recipe started out as banana bread but then I turned into an easy to make cake! My family loves nothing more than a simple, gooey but sweet cake to have for afternoon tea. However, they do have the mind set of this easy cake recipe being “healthy” because it contains banana and very few ingredients – which, to an extent is probably true when comparing it to a store brought cake! Cake is still cake and should be eaten in moderation.
I will just add, before we start, that the texture of the cake will change if you use plain flour rather than gluten free flour. Gluten free flour will keep the cake extra moist whilst the regular flour will make the texture slightly more bread like. The choice of flour is entirely up to you.
